I figured them out eventually,  but I found that the legs weren't that well done on how they fix the peg on the central chassis isnt straight but has an angle on it so when you put the legs in they don't go in straight. Perhaps I've done something wrong on building it but to me it looked like the small arm that holds the leg onto the body (the piston) is what holds the leg straight

Wait... who has a republic RT to assemble anyway?

Seems like European stores here and there already got their stock delivered and pre-ordering clients have had their boxes distributed.

I know I had. ;)

those are not the assembly instructions, it is the parts list, it says under the Star Wars Legion logo that the assembly instructions are available on the website

I received and assembled the AT-RT yesterday (without assembly instructions because they are still nowhere to be found). I'll probably try and find a second one when I can. Some lessons learned:

  • The top of the model i.e. everything that sits above the leg joints, all assembles very easy and intuitively. You don't really need instructions for that part because it has shaped peg-to-hole connections that is hard to mess up. It also doesn't move so it can be glued and sit and dry separately.
  • If I were to assemble it all over again I would start with the legs. It's hard to do that with no instructions because you don't know where the feet are going to land on the base before you assemble the upper legs and there are upper leg options. So the best way to do that is to start by dry-fitting the upper legs to the hips and deciding which upper legs you want to use (there are 2 different options for each side). You will also have to dry-fit the lower legs and feet as best as you can so you can figure out what the upper leg option will end up looking like.
  • The feet are hard to land right so you have to get a general idea of how the leg is going to be and where it will land and then plastic glue and hold the legs in place. This is the hardest part because the ankles don't really dry-fit and the feet are in 3 pieces. Try not to yell at anyone around you as you try and hold these in place to dry.
  • Once you get the legs glued together and feet glued to the base you are home free. Just glue together the top and set it on the hips (make sure when you are drying the legs the hip hole for the top is up)

I think this version of the AT-RT looks a lot better than the Rebel core set version and it is more customizable. FFG should have included some assembly instructions though. Good luck!

PROTIP:  Dont forget to magnetise your weapons guys!

Not necessary as far as I know for hardpoints. Hardpoint upgrades are not WYSIWYG barring specific tournament rules to the contrary. Which I don't recall seeing any specifying otherwise.
