100 points, start the game as one docked ship, and have all 6 original characters in a 100 point list. Pretty thematic.

Ehh.... there's ALOT going on here, so yeah it's most likely going to have 3 or 4 moments of "wow, I didn't know I could  pull that off" the first couple times you play it. This is basically the definition of a toolbox. Is going to win nationals? probably not. Regionals? nah. Store championship? Rebellions are built on hope, but not likely in this case. 

Is it going to look cool? Heck yes it is!

Alternatively, play around with the torps for an Initiative bid, or if you really want to drop both for a Z-95 blocker or something. Bomb slot to. (In fact, you could drop both torps and the bomb down to a seismic which leaves you 15 points for a chardaan Prototype A-wing, which would also be thematic.)

Sheathipede is kinda useless when attached to a solo-Ghost.  Phantom II lets the Ghost give actions to OTHER ships, but not itself.  I'd much rather have double-tap turrets.

Chop/Chewie could easily be upgraded to Hera/Navigator, but I just don't think the metagame has the right PS ships right now for Heragator to be worth the extra points.  Chopper can move fast, and also throw nasty blocks.  I don't like torpedo-weapons that much for the build, so I just put on Seismics.  Blowing up rocks can be handy.

The Ezra Shuttle is hilarious to me.  Defensive rerolls with two soft-focus, some number of Lando tokens, and probably Ezra's own evade. If the ghost drops him off, then boosts, Lone Wolf will be immediately active, and Lone Wolf with some chance at Focus tokens isn't too bad for offense.

I was more preoccupied with “can I get the ghost/phantom to 100 points” rather than “what would be the best option here?” 

And as stated, fitting all 6 main characters into a list is pretty nice.

Hahaha okay so I adore the dedication to keeping this fully thematic. But no, I don't think its competitive. As mentioned above, the Phantom II is not a good title for a solo Ghost. Idek if a solo Ghost is viable, it could die VERY fast.
