I don't know if this is anything, but I just noticed that this squeaks in at exactly 200 points:

    Plo Koon (44)
        Calibrated Laser Targeting (4)

Ship total: 48  Half Points: 24  Threshold: 2

    "Broadside" (36)
        Ion Cannon Turret (5)
        Seventh Fleet Gunner (9)

Ship total: 50  Half Points: 25  Threshold: 4

    104th Battalion Pilot (42)
        Seventh Fleet Gunner (9)

Ship total: 51  Half Points: 26  Threshold: 5

    104th Battalion Pilot (42)
        Seventh Fleet Gunner (9)

Hilariously, the Jedi is actually the least expensive ship in the whole list

I tried to build something around C1-10P earlier too, with 2 CLT Jedi, Ion Broadside, and an ARC.  It had its moments (Ionizing an ace, then Jamming away their Focus and blasting them at point-blank is highly satisfying), but the ARC (the only reliable 3-dice attack) was often not in position to take advantage of the freshly-Jammed target.  I think your list is great, with 2 highly maneuverable Jedi beatsticks alongside a nimble C1-10P carrier.

Lone Starr already showed us how powerful jam can be.
So I decided to built a squad around C1-10P.
    Obi-Wan Kenobi (47)
    R2 Astromech (6)
    Delta-7B (19)
    Mace Windu (45)
    R2 Astromech (6)
    Delta-7B (18)
    Plo Koon (44)
    Foresight (4)
    C1-10P (7)
    Total: 196

Obis and Maces job is to deal lots of damage. Both Jedi are flying the 7B for extra punch and extra shields. I am not taking Anakin because I think he's overrated for his pricepoint (especially if you compare him with Obi-Wan).
The centerpiece of this list is Plo with C1-10P. Plo burns both charges of the little droid as soon as the engagement is going to happen. After that he must jam one ship in range 0-1 after executing a maneuver. With an awesome dial and Fine-Tuned-Tontrols Plo has lots of maneuverability to jam enemy ships. He can first move and then barrel roll/boost to jam afterwards or jam first and then do the boost/barrel roll AND his normal action as usual.
Foresight is a strong card because the card is denying range bonusses and you can use it as a secondary weapon during the engagement phase.
The strategy is fairly simple: Plo is flying around jamming stuff and the Jedi are killing unmodified ships.
The best advantage of this list is that Plo is so cheap and so annoying, which means that my opponents wanted to see him dead asap. This fact gives Mace and Obi enough time to do their job.

Earlier this week I had some trouble figuring out if the conversion kit included new ship bases, and how many are included. Thanks to this thread (and I say this without any sarcasm), I know exactly what to expect!

For sure, and I've learned the hard way how fast ARCs can burn down.

So it turns out that CLT Obi-wan is the same # of points as a 104th w/ Seventh Fleet Gunner, so this also fits:

    Obi-Wan Kenobi (47)
        Calibrated Laser Targeting (4)

Ship total: 51  Half Points: 26  Threshold: 2

    Plo Koon (44)
        Calibrated Laser Targeting (4)

Ship total: 48  Half Points: 24  Threshold: 2

    "Broadside" (36)
        Ion Cannon Turret (5)
        Seventh Fleet Gunner (9)

Ship total: 50  Half Points: 25  Threshold: 4

    104th Battalion Pilot (42)
        Seventh Fleet Gunner (9)

Ship total: 51  Half Points: 26  Threshold: 5

I feel like this has a bit more promise.  Going to take this to the next couple store nights and see if I can get any mileage out of this.

That's actually the problem, which is really frustrating.  Your ARCs are going to die while giving plo his third attack die, but when they die they'll give up 51 points instead of 42.  Meanwhile, plo, who probably isn't going to die most games, only preserves 48 points.

Can confirm that Seventh Fleet Gunner is pretty fun on Broadside that Ioned an enemy ship in the previous turn for Luminara to line up her CLT for the 5 dice attack via 7th Fleet at range 1 plus CLT.

This is absolutely not the experience of video game companies, which are the progenitors of this sort of thing. Those companies run into this trouble all the time. How often is too often? Because such a thing does exist: if things are changing all the time, it's constantly disorienting for the players. The more casual the player, the more disorienting it can be. In addition, you need data to make good decisions. It takes time for people to try things-- after all, Jendon-plus-Inquisitors was a build that was available from launch, and it took a loooong time for it to become a thing. The meta takes a long time to stabilize even when new products aren't frequently coming out to shake things up. And how do you call a meta "stable", anyway? By looking at tournament results-- which are a lagging indicator, always time-late. You need a certain critical mass of data to make informed decisions, and it takes time to accumulate that. Again, this is a limitation to X-Wing that differentiates it from video games: the big online gaming companies have full, perfect, and instant access to the results of every match. FFG, um, doesn't. Even if it did, the number of iterations in online games is orders of magnitude higher than we get in X-Wing-- and even the video game companies struggle with balance.
We don't need to bad-mouth FFG, here. They're improving things for us, and they have a lot of concerns to balance (pun intended). Cut them some slack.

Via Epic Rules Reference (basically Random once bids are going to be taken into account makes sense):
    Free-for-All
To determine player order, each player is assigned a player number arbitrarily. To do this quickly, take numbered ship ID tokens with numbers corresponding to the number of players (e.g. if there are four players, use ID tokens #1, #2, #3, and #4). Randomize them in a cup or hand, then give one to each player at random. Then, players should arrange themselves around the table by their number as the scenario setup diagram dictates.
Additionally, in Free-for-All scenarios, effects are resolved in descending player order.

So one way to do it is Random,. Bid(s) gets to pick first, but the rest have random initiative. Another way was rotating, every round first player passed the first player token to the left and initiative carries on clockwise.
I have heard that there is a 'proper' way to work out 3 player+ initiative from the Epic Battles expansion. (seeing as that is the multiplayer add on, makes sense).
