Overall I do find it viable.
However, GMing is a bit like being a lawyer: Never offer your party a choice in which you do not have an adequate plan for the campaign direction, or at least can live with their choice.
If you are worried about them trying to take the Star Destroyer, I would recommend a smaller ship, like a Vindicator cruiser or a Dominator System patrol craft. The smaller the ship the better, they would be able to get real life practice in their position (Pilot, Commander, Engineer, ect) and have a NPCs as Senior Officers. If your group has the RP experience, you can even have them make an Senior Officer PC (with say another 100XP), with the stipulation that their Big cannot be in the same area as their Little (So the Engineer cannot play both the Department head and the intern) for at least a little bit.

You mean like, explosives that would be used to destroy a building? When a building goes up in flames,
Unlike what you see in movies, explosives that bring down a building are strategically placed to bring down the support columns. Then the building falls, that is a result of the explosives and generally does not have the theatrical fireball.
Also, while you are at it, please disregard the scene from Commando where Arnie demolishes the barracks by placing Claymore mines outside of the buildings....that was is pure Hollywood fantasy.
1) the mines were placed incorrectly (with the business end facing away from the building)
2) they have a small explosive charge designed to propel several hundred BBs over a wide area, so even if they were placed correctly, the end effect would be shooting the buildings from PB range with several shotgun rounds.

Studying how to make Sulfuric Acid is not evil, using to disfigure people, dispose of bodies, or using it as a gas to burn out people's lungs is. Using it in wet cell batteries to create power or many other uses is not.

He is doing the right things as far as defeating evil (killing the sith witch and fallen jedi) but are you even trying to meet him half way on the rewards for doing so. Take the light saber, for example, the crystal is the expensive and rare bit, the rest is around 300 credits to make. Maybe have him do a quest of some sort to purify the crystal and then make a new saber for himself (treat the newly purified crystal as a Illum crystal).
The Holocron is another story, using a dark holocron to learn from is not an evil act. Acting on those teachings may be. One of the many faults of the Old Jedi order was that it refused to study or learn from their enemies fearing that those that did would fall to the temptation. This left them out of the loop when it came to their tactics.

Entanglement Grenades don't have Limited Ammo for a reason. The only example we have of them is the Glop Grenade, which has a reusable, refillable chassis.
Which are not immediately refillable in combat. Limited ammo would still apply as one cannot simply go over to where the grenade landed, pick it up, and use it immediately after.

Also it sounds like you have created a campaign that the PCs are not interested or have a vested interest in.
Since you have already stated that neither you or the PCs really want to play a campaign of a Cargo hauler/ Horse trader, then why do it?
I would suggest taking a session off and having a frank discussion with the group about what THEY would enjoy playin, what THY would like to see unfold and so on. Then see if that is something you could enjoy running and work with them to forge a concensus about the campaign.
There are probably a few forms available on the web for you to use.

the influance power allows the user to issue a few simple commands and the user will rember 5 minutes later. So you would need to be making the roll all of the time. A better power would be Battle Meditatation and use only DS points to fuel it as this will crush the targets mind.
However, what is really being overlooked is that being a killik joiner means that the PC has virtually no free will, you are a mind dead drone that does what the Hive mind says (Vextor in SWTOR is a special case as he was allowed to keep some of his free will to aid the Sith). This means that the PC should be doing everything you say, as the GM controls rhe Hive Mind. They effectivly are an NPC that is being controlled by a player.
Think of a player that wants to play a droid that is similar to a robot welder on a car assembly line....not much fun

The Munificent class frigate in published in either Fly Casual, Far Horizons, Dangerous Alliances, or Lead by Example (I was looking through these 4 books and saw it in there), some other capital ships have been published as well.

While it is the GM's mistake, I can understand where he comes from. Nearly every other RPG ever made either flat out prevents you from doing something that you do not have a skill in or provides a hefty Unskilled penalty to the task. So him assigning the difficulty increase is very understandable and nearly reflexive.
However, what he did not realize (and what many people do not), is that the system assumes that you have a basic "user" level knowledge with the universe, and that the unskilled penalty is actually nothing more then not being able to get critical successes (aka Triumph results) on the roll, nothing more.

So in short, your plan is to make your players do something that they are not interested in or wanting to do (Speculative trading), in order for them to fix up their ship which has several flaws, that you the GM, added to make their ship less than perfect. Then after all of this, you plan to have their newly fixed up ship stolen from them....
Sounds like a total **** move...

Sting straps on his holster and checks the sights and power levels of his blaster. He holsters it and then picks up his gaffi stick and slides it into the holder on his belt. Satisfied that he is properly armed in case of a boarding action. He then heads to the docking ring and starts to examine places to take up position should it be needed.

Specifically, the control upgrade line thatallows you to Store a Force Die and them upgrade 1 attack that targets the character. I know how this would work in personal scale, but what about in vehicle or space combat situations?
If the power would work at all, I assume that the PC with the sense power would ned to be piloting.

So the moral of the story is that if you want to get the talents cheep, you need to diversify. If you are drilling to a specific talent (Usually Force or Dedication), that is the price you pay for doing that.
