So each player gets up to 3-5 critical wounds every battle? How do they survive? How do they still have limbs? Are they winning these fights? Does the next scene after the fight always start with them coming out of cloning vats?

I think they can.  But (and this is just MHO, and there are large differences of opinion on this) they need to complete at least three specs, delve into several Powers, and hit FR3+ before they can be like the "Jedi of old".  That's somewhere between 600-1000XP, which, if you play regularly, is achievable.  Plus, the fact that it takes so long is a good thing (again MHO), otherwise it feels like the difficulty of being a Jedi isn't really explored properly.

If FFG did it that way:

"I don't understand FFG's thought's, why do they make me buy a huge source book with every alien that's ever been mentioned in Star Wars just so I can play a Duro pilot.  It's not like they're some fringe, uncommon race.  Then they want me to buy a whole huge ships book to fly something other than a YT-1300?  and I still have to wait for the "Jobs in the galaxy" book stuffed with colony rules and running shops and other crap I don't need just to get rules on how to smuggle goods?  Bloody cash grabs, why can't they just make a smuggler book?"

Outstanding example - that's a perfect picture to put things into perspective visually!

Conceptually however, I believe it might be a bit more accurate to think of a stock YT-1300 like this:

...and the Millenium Falcon like this:

You took a nice stab at it. However, I would note that it wasn't advanced comms that helped Han find Bespin so much as an advanced sensor array or astrogation system would have provided the necessary data.

Also, on the electronic countermeasures suite, I don't necessarily think an enhancement to the ship allowed his hiding from the Star Destroyer so much as his guile and excellent piloting.

I'm not saying my notes are the ultimate solution; these are just my opinions.

Han's GM clearly allowed him to remove the Falcon's secondary hyperdrive for an extra Hard Point (and them made him pay for that decision the entire campaign).

I like a good mix of crits and narrative events for combat.  Whatever will make the scene the most fun or play into what I had in mind for lingering issues.

If you think the system is causing too many crits, why do you insist on spending advantages and triumphs on them exclusively? If you use them on other things your problems would be solved, would they not?

Here are some more of what I'd call my finished product:

The starship minis that I've decided fit best are the Galoob Micromachines and the WOTC Minis

The vehicles are just carboard print outs on GW flying bases.

I think Wonderduck might be on to something here. I have had plenty of games now and indeed criticals have come up but 3 as common number and 4 maybe 5 in larger combats? That does seem mighty excessive...

Wait... Am I doing something wrong? Why are your players incurring so many criticals that they become difficult to track? My guys get crits upon them but it's a big deal when they do and it usually means it's time to disengage and retreat. Also healing is not instantaneous after the med roll. At least not in my game. The healing roll stabilizes the wound and means you will recover, but that recovery takes time. Bed rest and down time. Don't just roll them away, this is a narrative game.
If your guys are getting so beat up maybe they should avoid combat a little more often, or get better at it.

The wording (imho) of Blast is pretty confusing. But, broken down what it says is:

Damage = Base weapon damage. Add # of Successes.
Blast = Typically less then Damage. Still Add # of Successes (if any).

Failure, Blast not Activated = Nothing happens. Grenade bounced away.

Success, Blast not Activated = Target (only) takes Damage. Others dove for cover.

Success, Blast Activated with 2 Advantage = Target takes Damage, those Engaged take Blast. It was a good toss, landed by the target's feet, catching him with the full force and everyone else nearby with a lesser blast.

Failure, Blast Activated with 3 Advantage = No one takes Damage. Target and those Engaged take Blast. It was a near miss. No one took the full brunt, but everyone was still caught in the blast.

If there were only some way of getting the shipment through in a manner that avoided the bureaucracy. I don't even know what we would call something like that.
