If you're looking for creature stats to use there's a really nice unofficial fan sourcebook PDF that acts as a bestiary for dozens of Star Wars creatures, though it doesn't seem to have a Kowakian Monkey-Lizard or Massif in it. There seem to be loading issues with a lot of the pages right off the link there so you should probably download it so you would get the whole thing.

I'd say that mountable or not there should be a means of training tamed, domesticated, and creatures raised from youth so that controlling a creature to do X, Y, Z in combat and other situations can go from actions requiring a survival check to maneuvers requiring no check at all and eventually incidentals with enough time spent training, while the creature as a separate entity would then do whatever action the player orders it to do whenever it's turn comes up in combat or outside of it at the GM's discretion. This would also keep things balanced by making having and controlling creatures particularly from youth take a significant time investment especially when one is trying to train entire groups of them. Much like how training a creature to be ridden works in the Seeker book I'd go with an average survival check and a time at least 4 weeks time per creature, decreasing the time by a week each 2 adv and reversing for threats and despair, while decreasing the time by a week for each level in domesticatable the creature comes with. Maybe throw in some more involved orders one could choose to train into a creature specifically, like training them to incapacitate and restrain opponents which would make it's attacks affect strain instead of cause wounds, or make it better at avoiding being hit when being attacked by an opponent.

If they are short on skills, just give them more starting XP and/or extra specs for free.  Just don't allow them to spend all their XP in one place, they need to be "well-rounded", at least in the beginning.  The default for this game is that each PC will be "decent" at one or two things, and pretty much suck for everything else.  But the default also assumes the PC is part of a group of 4+.
With my 3-party group, I was pretty generous with XP, and waived the extra spec costs (with limits, to prevent cherry-picking).  We also found that using a 3/3/3/3/2/2 attribute split made it easier to be well-rounded, plus, that first Dedication is pure gold because you then have 4/3/3/3/2/2.  If you start with 4/3/2/2/2/2, it takes 2 Dedications to get the same result.
For my son's OR Jedi campaign, where he was the sole PC, I basically threw XP at him (again, with limits) and he started the game with 3 Sentinel specs open.  Since OR Jedi were usually acting solo, it really embodied the flavour.  It's not that he was amazing at everything, he still had his strengths (Deception and Cunning-based things) and weaknesses (Piloting, Mechanics, Brawl), but he was able to draw on a wider range of resources to meet challenges, and, more importantly, I could make the challenges credible.
Of course, your players have to buy into the "breadth vs depth" way of building their PC in order to make it work.

The rebel base and business/homestead rules do include options to make additional skills count as class skills for XP purposes.  That may help.

I have an upcoming mini campaign I'm running with my girlfriend and my bestfriend(roommates) and I'm planning on the game being just the two of them for now. If others end up interested in joining, awesome, but for now they're just a duo. Best friend is a stealthy/smuggler type, girlfriend is a gunslinger pistolero type, I'm contemplating adding in a third character as sort of a "DMPC" but I'm waiting until I'm sure of what they're final build will be, if I do it will be a Sathari ace pilot type.

What ship would you suggest for a crew of two? They're wanting something with a fairly decent cargo capacity but they need it to require minimal crew to operate. They also need the ship to be capable of carrying/mounting/launching a starfighter before and/or during combat. They will be receiving an ugly(mix of different ships, including a Naboo N1, TIE Bomber, and some other bits here and there but it will act as a gunship).

They're both looking for build suggestions on their characters as they are both new to Edge of the Empire but both are big Star Wars fans. Best friend is definitely wanting to go with the stealthy role, potentially using sniper rifles in combat but he is open to suggestions, and he wants to be a slick, smooth smuggler/criminal type of character reminiscent of Han Solo and Hondo Ohnaka. The girlfriend on the other hand wants to be a gun bunny type. She's using a Dragoneye Reaper with mods on it that make the thing an absolute monster(I believe 13 damage) and she'd like some explosives/demolitions skill as a back up. Both would like to be mechanically inclined so they can repair the ship(him), work on droids(him), use tech in combat(her) and modify arms and armor(her)

Tychus looks at the Sentinal and grunts. "Six ain't much. Especially with a group like us. Most the rest shouldn't be able to respond in time." He says, offhandedly waving his pistol in the direction of the firefight.
"Unless you wanna do your whole 'Follow my orders, I'm an officer' thing that you do? Might not end up like it did on Boonta Eve hahaha" he says, remembering the shootout and all the chaos that followed.

"Ladies, lay down and settle in!" Tychus barks to his reptilian hounds as he jumps into the main pilots seat.
"This is your captain speaking, please keep hands and feet inside the vehicle and fasten seat belts." he says, laughing and taking the ship skyward. And. Away. We. Go...

Yes, rolled with no difficulty cause idk what(if any) setbacks Shard wants to put on there. Normally the Blaster Actuating Module gives a setback but that is negated by Custom Grip so usually shooting is at zero penalty as from GM placed modifiers.

Jaycen glances at Tychus and gives him a look. "How was I supposed to know that Imperial was engaged to that Trandoshan?  Inter-species relationships are incredibly hard to predict.   It would've worked just fine otherwise" He says, in reference to the incident Tychus mentioned.  While he says this, he begins to rummage in his backpack, ducking inside a nearby doorway as he does so.  "Yes, the officers likely know who they are looking for,"  Jaycen says to Kaz, his voice relaxed, his Imperial accent becoming more pronounced, as if he was holding it back. "however your average trooper is usually told to just go here, go there, and shoot at anyone they think looks funny.   They are conditioned to follow the chain of command, " he continues, taking off his outer clothing, and pulling out a folded packet of grey clothing.  He carefully unfolds it, revealing an Imperial Lieutenants uniform.  He puts it on with practiced ease, straightening the sleeves, and his colors on his breast.  He then strips out of his pants, not really worried about modesty, he's got on shorts anyway, putting on the pants and boots.   He puts on the gloves, but before donning the Imperial cap, he turns toward the frame of the doorway, sighs heavily as if he hates what is about to happen, and then promptly smacks his forehead into the frame.  "Ow." He says, for obvious reasons, as a bit of blood begins to appear on his scalp, and slowly trickling down his cheek.  He takes the cap, and puts it on, carefully avoiding the blood.
He looks at Kaz, apparently satisfied with his preparations.  "So we are going to give them exactly what they think they want, and then aim them in the other direction for the final morsel.   I'll need you to play the cowed fugitive, caught and resigned to your fate."  He draws out a small blaster from his pack, and holds it in his hand.

Seeing Kaz agree to the ruse, Jaycen grabs his hands behind his back, and begins to roughly shove him forward, approaching the group of soldiers.

"You there!" He says, his voice full of command.  "Trooper!" He again shoves Kaz as he approaches, just enough to make his gate a bit unsteady.  "My squad has located the targets of interest, and we were able to capture this putrid filth here." He says, twisting Kaz's wrist just slightly to make him wince.  "My squad is pinned down however trying to apprehend the other suspect, apparently they were able to get in contact with some local resistance, and they are hold up two blocks that way!"  He points towards the more seedy part of town, where there are hints of noise and activity rising over the air.  He reaches up and dabs at the blood on his forehead, taking a moment to look at it on his gloved finger.  He snarls and cuffs Kaz across the back of the head with his hand that is holding the blaster, always keeping the other hand behind Kaz's back.  "They need reinforcement now!  The vermin are surprisingly well fortified, and we can't let the other fugitive escape!  Hurry!"  He says, gesturing again, in a tone of certainty that his orders will be obeyed.

Kaz follows the group taking time to look over his new companions a little more. That gun really is huge, is he trying to compensate for a lack of something else? "Really, six troopers and probably a few more on board, that's a bit light for a guard. There must be more hanging around here watching over things...Either way if we get onboard things get easier. Let's not forget these guys know who they are looking for from what you told us, any imperial who gets a good look at is is going to need to die or this won't be a dead end for their hunt." Kaz pulls his cloak around him, the shield on his back may be a bit of a give away if they know about that though.

Tychus followed along with the rest of the crew, his hounds at his heels, their eyes constantly scanning their surroundings. Then they entered the meeting area he stayed within earshot but didn't weigh in on the conversation... not until Kaz' outburst.
"Watch yourself mate, things are about to get real dicey around here." he says, waving the hand cannon towards the looming Imperial ships. "Last thing we need is someone who ain't stable up-top." he taps the blaster against his head with a smile. "Now, if you got a boat offworld, lets make with the moving, and if you don't then let's make with the thievin', okay?"
All this small talk and beating around the bush was gonna land them in an Imperial jail cell... he was starting to get itchy, and from the low mewling coming from Wrath and Ruin, the anxiety was beginning to be noticeable. "Everyone agree... or should I ghost y'all, do some killy-killy, and get us a ship while ya talk all day?"
Suddenly the look of building anxiety was replaced with a sadistic grin. We really liked the idea of being let off his leash.

Tychus just barely resists the urge to take a pot shot at one of the TIE fighters as they pass by. It wouldn't be the first time Reaper had taken one down.
He looks over at the rest of the party and grunted. "Oi, we move or we fight. No more time for idle gak-talk. Whatever we're doing, we need to get a move on, NOW."
It wasn't that he was scared, he just hated standing around doing nothing... what if she was with them though? He shook the thought from his head, clicked his tongue for Wrath and Ruin to come to heel, and looked at the two users with a 'What're we waiting for?' look on his face.

If anything, worst case scenario, myself and the pilot are both pretty shooty, we could duck off and go steal a ship while the talking is going down. I doubt there's much around that can stand up to a hit from my blaster, so as long as I'm hitting, they're dropping.

Tychus looks at the second ship arriving and sighs, a small cloud of smoke drifting languidly from his lips and nostrils as the cigar smoke exhales.
He grunts when he reads the sign, looking at Wrath and Ruin, clicking his tongue and pointing and two spots on the perimeter. They would keep eyes open for any Imperial forces approaching and signal him with their bark-yelp call.
"Caess, if you're gonna make with the talkin' I suggest you get movin'. Bucketheads are gonna be coming soon." he says, drawing the massive pistol, the weapon looking for all intents and purposes like a downsized pistol version of a blaster cannon. "I got Wrath and Ruin watching the flanks, I'll hang back and watch our rear. Just get them marks smiley and warm to us so we can get to haulin' tail."
He primed the cell of his pistol, the large cylinder revolving slowly with a low almost imperceptible droning sound. He puffed again on his cigar and smiled sadistically. He was already wanted on several planets for dead Imperials, what was one more?

Tychus saunters alongside Juggo and Jaycen, a large cigar perched between his lips and his face a cross between squinting scowl, and cocksure smirk. He wears a seemingly casual outfit of long sleeve shirt, buttoned with a bantha leather vest overtop. Much of his pants are covered by leather chaps of the same hide as his vest, tucked into heavy knee high boots with plasteel plating. Two large reptilian hounds stalk at his sides, his prized Abeks "Wrath" and "Ruin", keeping pace with him and eyeing anyone who ventures too close. His right hand rests casually on the grip of the abomination holstered on his right hip, more a cannon than sidearm. The massive pistol was very obviously a custom job, with inlaid grip of leather and Krayt Dragon horn, its plated bulk etched with Huttese curses.
"Well, y'all see what's coming and I'm not for subtle." he grunts, puffing on his cigar and then flicking it away.
"What's say we go lay our cards on the table for the marks, and then find us a getaway before it hits the fan." he then pats the grip of "Reaper", his pistol, with a grim smile. "You want me to talk to 'em or should me and the girls pull guard in case the bucketheads come calling?"

@DJCrazee Drawing the party sounds awesome! As the Jedi were aesthetically based on Samurai, in my head-canon the Jensaarai are based on medieval knights - hence, the focus on crafted armor. I see Sevrahn as being in a futuristic form of chainmail, similar to this. Otherwise, his shield is a fairly standard sort of affair, and his crafted Lightsaber has a crossguard - again trying to go with the whole "Jensaarai-as-medieval-knights" schtick. Sevrahn is quite straightforward with his fighting - as overwhelming his opponents physically and taking the blows with his shield and armor seem to work quite well - but he is trying to learn a few tricks, such as throwing his saber, from Kaz.
Can't wait to get started with you all!
