I think you misinterpret the words "If you choose to attempt the challenge, do not draw an adventure card".
Consider this first: when you land on an Adventure Jewel, you needn't face the Challenge (rulebook pg.4 step 3: Adventure). If you choose to attempt it you draw a card of the matching colour. When you have an Undefeated Challenge on that Jewel, you proceed in the same way: if you choose to attempt it you don't draw a card but face the Undefeated Challenge. Otherwise, you choose not to attempt the Challenge, thus ending your turn with Experience Step.
Undefeated Challenge Track is there to record previously undefeated enemies that stay on the board, until they are defeated by a Hero or the 7th Undefeated Challenge is revealed. At that point, you discard the First undefeated Challenge and replace it with the new one
However the adventure token is still left in the space while the Undefeated Challenge token is there. No where in the rules does it actually state that you ignore adventure tokens while an undefeated challenge token is there. Now if the rules stated that you place the adventure token with the undefeated challenge card, and place the undefeated challenge token in its place on the board that would be one thing.
I would argue that the FAQ statement quoted earlier could be read that if the adventure token and the undefeated challenge card are of the same color, you do not have to encounter the undefeated challenge first. In which case you can choose the order of which they happen. In which case you would be able to resolve both the undefeated challenge and the adventure token seperatel. One question that could come up is if you defeat the undefeated challenge, and take the adventure token, do you still resolve the adventure token or since its gone now, do you just move to the step.
I would just like to see some sorta official clarification regarding these scenarios.
