Can the toad take a follower?

Or pick up gold and objects? And if so, do they lose these things when the transform back?

 No, he may not.

If a Toad encounters an Object or Follower, he must leave it in that space.

Unless it is the princess and she kisses the frog.

Then you change back into a prince.

Still... allowing the Princess alone to stay with the frog... er, I mean toad, might make an amusing house rule. It really wouldn't change anything much.
